What an observation day is

You pick the date. One of us arrives for the hours you name — often opening until mid-afternoon, or a split covering lunch and early evening. We count entries, mark where people stop, and note the moment they leave without buying or booking. At the end of the day you get a two-page note and a rough floor sketch, not the full sheet set of a customer behavior study.

When this is enough

A refit is coming and you want a last look at how the current rails work. A café is testing a new pastry case. A guest house wants someone to sit in the lobby on a Friday check-in. These are bounded questions. If you need hours matched against a month of till rolls, ask for the longer study instead.

Included and not

The day itself, a short debrief the same afternoon or the next morning, and the two-page note. Travel inside Tbilisi is included. Nights, public holidays, and towns beyond the city are quoted. We still do not film guests.

How to ask

Name two candidate dates and the hours. If staff rotas are tight, we can work around a closed Monday. Send a note and we will confirm whether those days still have space.
